When I’m limiting my sugar, there are days I really feel the pull for something sweet. Go figure! So to fight that urge, I made some cocoa coconut energy balls that will both help fill you up and satisfy your taste buds. For this episode of “Foodie Friday“, I want to share my personal recipe with you!

Last week I was out running errands and started feeling that familiar grumble in my stomach. I realized I hadn’t eaten anything yet that day! On busy days like that, I swing by Starbucks for some sweet frozen coffee treat. However, I’m deep in a sugar detox. So when I stopped into Natural Grocers to get a few grocery items, I grabbed a Lara Bar. It was some coconut brownie concoction and was delicious and satisfying. I knew I could make something similar to have on hand at home. So once I got home, I did just that.

If you like Lara Bars, these are in the same category. They are free of refined sugar and dairy. They are also full of good fats and protein. Take these along with you for a quick snack on the run or eat as a dessert. Either way, I think you’ll find the sweet nuttiness will keep your stomach satisfied as well as your sweet tooth.

Cocoa Coconut Energy Balls

Ingredients

  • 2/3 cup pecans
  • 2/3 cup pitted dates
  • 2/3 cup unsweetened coconut flakes
  • 2 tbsp unsweetened cocoa
  • 1 tbsp pure maple
  • 2 tsp coconut oil (melted)

Instructions

  1. Add all ingredients to food processor and process until all ingredients are well incorporated.

  2. Use a cookie batter scoop or hands to make 14 even balls.

  3. Enjoy!
