Happy “Foodie Friday“! Last night, we felt like having a little fiesta at Casa de Chairez. So, I whipped up some of my super delicious spanish rice. Since I’ve been eating a straight vegan diet for 6 weeks (no cheating), I’ve been trying to give in to my grain and vegetable cravings. This simple spanish rice will have your tastebuds applauding and your family begging for more.

For rice dishes like this, I typically like to use my Power Pressure Cooker XL. Though, this recipe can also be done on the stove top. I paired my rice with some sauteed onions and peppers (which I have been eating nearly every day). I also cooked up some black beans. My plate was just full of color!For my husband, I made him a chicken and cheese quesadilla to go along with his rice. He’s not big in the vegan meal plans, so I just make sure I throw some meat and cheese in there for his benefit.

Simple Spanish Rice

Enjoy this simple, tasty Spanish Rice recipe that is sure to have your family begging for more! Cook it in your pressure cooker or on the stovetop!

Cook Time 10 minutes
Total Time 15 minutes
Servings 4 servings

Ingredients

  • 1 cup instant brown rice
  • 1/2 cup water
  • 1 14.5 ounce can dice tomatoes
  • 1 tbsp olive oil
  • 1 tsp ground cumin
  • 1/2 tsp salt

Instructions

  1. Combine all ingredients in pressure cooker and cook on rice setting. Or, follow cooking time instructions on the rice package if cooking on the stove top.

  2. Serve and enjoy!

  • Ah! You shared this recipe at the perfect time! My husband and I just went out to a nicer Mexican restaurant and were talking about how we could probably hack the whole meal for a fraction of the cost. This takes care of the Spanish Rice portion of the meal, haha! 🙂

    • Aw! That makes me happy! My husband and I discuss that often. These days, if we can make it at home, we will. If it’s something worth the price at a restaraunt, then it’s a treat to go out. You’ll have to let me know how you like it!

  • Sounds absolutely wonderful! I’ve always used my granny’s recipe for cooking rice (damn that tastes so good). It wouldn’t hurt to try something new 🙂
