Vegetable Penne in White Wine Sauce

A couple weeks ago, I was looking to make myself a pasta dish without white flour. Typically I go for a whole wheat pasta, but I wasn’t easily finding any. I did stop by Natural Grocers and find a gluten free penne pasta made of brown rice. I decided to give it a shot. It was delicious! This dish would really work with any penne pasta or even a linguini (which is my husband’s favorite). So for today’s “Foodie Friday” I decided to share my Vegetable Penne in White Wine Sauce recipe with you!
This vegetable penne also includes bell pepper, onions, and tomato. I’ve been eating my weight in all three lately because I’ve been craving them nonstop. I’ve even put the vegetable combination on my baked potatoes! So I loved them in some white wine sauce! Try this out and tell me if you like it!
Vegetable Penne Pasta in White Wine Sauce
Here's a delicious, healthy pasta dish that is sure to leave you feeling satisfied. A simple recipe with simple ingredients make this an easy dish for any home cook!
- 2 servings cooked penne pasta
- 1/4 cup white cooking wine
- 1 tbsp olive oil
- 2 cloves minced garlic
- 1/2 medium bell pepper (sliced)
- 1/2 small white onion (sliced)
- 1 medium roma tomato
Cook penne pasta according to instructions on the box.
In a saute pan, heat white cooking wine, olive oil and minced garlic over medium heat.
Once garlic is translucent, add peppers, onions and tomatoes. Sautee until onion is translucent and peppers are soft.
Toss cooked penne pasta in pan with vegetables and white wine sauce.
Serve and enjoy.
